  • 2 boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 2 carrots, chopped
  • 1 sweet potato, peeled and diced
  • 1 cup green beans, chopped
  • 1 cup brown rice
  • 1 tablespoon olive oil

Instructions

  1. Wash and chop the carrots, sweet potato, and green beans into small pieces.
  2. In a large pot, heat olive oil over medium heat and cook the chicken breasts for 5-7 minutes on each side until fully cooked. Remove from pot and shred once slightly cooled.
  3. In the same pot, sauté the prepared vegetables for about 5 minutes until they start to soften.
  4. Add low-sodium chicken broth and brown rice to the pot; bring to a boil. Once boiling, reduce heat to low and simmer for about 40 minutes until rice is tender.
  5. Stir in shredded chicken and simmer together for an additional 10 minutes before cooling down to a safe temperature for serving.
