  • 1 cup cooked brown rice (or white rice)
  • 1 egg, lightly beaten
  • 1/3 cup oat flour (or whole wheat flour)
  • Optional: 2 tablespoons chopped parsley, 1 tablespoon coconut oil

Instructions

  1. Cook the chicken until fully done and shred it into fine pieces. Cook the brown rice according to package instructions and let it cool.
  2. In a mixing bowl, combine the shredded chicken, cooked rice, optional parsley, and oat flour. Stir in the beaten egg until well mixed; add coconut oil if needed for consistency.
  3. Roll small portions of the mixture into bite-sized balls (about 1-2 inches in diameter).
  4. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and place the balls on it.
