  • 2 medium-sized sweet potatoes
  • 1 large boneless, skinless salmon fillet (about 1 pound)
  • 1 egg
  • 1/4 cup oat flour (or coconut flour)
  • 1 tablespoon coconut oil (for frying)
  • Optional: 1/4 cup fresh parsley (chopped)
  • Optional: 1/4 teaspoon turmeric powder
  • Optional: 1/4 cup shredded carrots
  • Optional: 1 tablespoon ground flaxseed

Instructions

  1. Prepare sweet potatoes by cooking them in the microwave for 6-8 minutes or baking at 400°F for about 45 minutes. Once cooked, cool and mash until smooth.
  2. Cook the salmon fillet in a pan over medium heat with water until opaque (about 5-7 minutes). Flake the salmon after cooking.
  3. In a mixing bowl, combine mashed sweet potatoes, flaked salmon, egg, oat flour (or coconut flour), and any optional ingredients. Mix well.
  4. Shape the mixture into small patties.
  5. Heat coconut oil in a non-stick skillet over medium heat and cook each patty for about 3-4 minutes per side until golden brown. Allow to cool before serving.
