  • 1 medium sweet potato, cooked and mashed
  • 1/2 cup chopped spinach (fresh or thawed from frozen)
  • 1 cup oat flour (or whole wheat flour)
  • 1 egg, whisked
  • 1 tbsp coconut oil, melted
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon (optional)

Instructions

  1. Cook the sweet potato by boiling or steaming until tender; then mash into a smooth puree and let cool.
  2. Chop the spinach finely after washing it thoroughly or thawing if using frozen.
  3. In a mixing bowl, combine the mashed sweet potato, chopped spinach, oat flour, whisked egg, melted coconut oil, turmeric, and cinnamon (if desired). Mix until you have a soft dough.
  4. Roll the mixture into small balls about one inch in size.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Bake the bites for 15-18 minutes, turning them halfway through to ensure even browning.
