  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz creamy brie cheese, cubed
  • 2 medium Granny Smith apples, diced
  • 2 tsp fresh thyme, chopped
  • 2 tbsp honey
  • 2 tbsp olive oil (plus more for searing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté diced apples and thyme for about 5 minutes until softened.
  3. Remove from heat and mix in cubed brie cheese and honey.
  4. Cut pockets into each chicken breast without slicing through completely; stuff generously with the apple-brie mixture.
  5. Sear each stuffed chicken breast in an oven-safe skillet over medium-high heat for 3-4 minutes per side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for about 25-30 minutes until the internal temperature reaches 165°F (75°C).
