  • 3/4 cup packed light brown sugar
  • 1/2 cup sugar
  • 2 large eggs
  • 2 cups diced Granny Smith apples
  • 1 3/4 tsp ground cinnamon
  • 3/4 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a bowl, mix flour, oats, baking soda, cinnamon, nutmeg, and salt; set aside.
  3. In a separate bowl, cream together butter and sugars until fluffy.
  4. Beat in the eggs one at a time followed by the vanilla extract.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the diced apples gently.
  7. Scoop tablespoon-sized portions onto prepared baking sheets.
  8. Bake for 9-12 minutes or until edges are golden; centers should be slightly underbaked.
  9. Cool on sheets for a few minutes before transferring to wire racks.
