  • 220g butter
  • 220g caster sugar
  • 4 medium eggs
  • 50g ground almonds
  • 170g self-raising flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 8 halved apricots
  • Icing sugar (for serving)

Instructions

  1. Preheat your oven to 180℃/350℉ and grease a stoneware dish.
  2. Cream together butter and caster sugar until light and fluffy.
  3. Add eggs one by one, mixing well after each addition.
  4. Fold in ground almonds, self-raising flour, baking powder, and vanilla extract until just combined.
  5. Pour the batter into the prepared dish and smooth it out evenly.
  6. Press halved apricots into the batter, sprinkle with extra caster sugar.
  7. Bake for 35-40 minutes, or until a skewer inserted comes out clean.
  8. Allow to cool slightly before dusting with icing sugar and cutting into squares.
