  • 1 lb apricots (chopped)
  • ¾ cup white granulated sugar
  • 2 tbsp cornflour/cornstarch
  • 2 cups all-purpose flour
  • 6 oz cold unsalted butter
  • ½ cup sugar (for crumble)
  • ¼ tsp salt
  • ½ tsp spice powder (cinnamon or nutmeg)
  • 2 tbsp milk (whole)

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8 x 8 inch square cake pan with parchment paper.
  2. In a food processor, combine flour, sugar, salt, and spice powder. Add cold butter and pulse until crumbly.
  3. Divide the mixture into two bowls; mix milk into the base bowl and spread it in the pan. Bake for 10 minutes.
  4. Toss apricots with sugar, cornflour, lemon juice, and salt in a large bowl. Spread over the baked base.
  5. Sprinkle the reserved crumble topping over the apricots and bake for another 35-40 minutes until golden.
