  • 1 3/4 cups flour (sifted)
  • 1/2 tsp lemon zest
  • 1/4 tsp salt
  • 8 oz cream cheese (soft to room temperature)
  • 1 cup butter (soft to room temperature)
  • 1 jar apricot preserves
  • Egg whites (for brushing)
  • Granulated sugar (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together butter and cream cheese until smooth.
  3. In a separate bowl, sift flour and salt, then stir in lemon zest. Gradually mix into the creamed mixture until combined.
  4. Form dough into a ball and refrigerate for 30 minutes.
  5. Roll out chilled dough on a floured surface to about 1/8–1/4 inch thick; cut into 3-inch squares.
  6. Place a teaspoon of apricot preserves in the center of each square, brush edges with egg whites, fold corners toward the center, and seal.
  7. Arrange on an ungreased cookie sheet; bake for about 25 minutes or until lightly browned.
  8. Cool on wire racks before serving.
