  • 1/4 cup low sodium soy sauce or tamari
  • 3 cups shredded purple cabbage
  • 3 cups shredded green cabbage
  • 1 cup shredded carrot
  • 1 red bell pepper, sliced
  • 1/2 cup shelled edamame
  • 3 tablespoons natural creamy peanut butter
  • Fresh herbs (cilantro, green onion)

Instructions

  1. 1. Marinate cubed chicken in soy sauce, garlic, brown sugar, tahini, sesame oil, rice vinegar, ginger, and sriracha for at least 15 minutes.
  2. 2. In a separate bowl, whisk together peanut butter, soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, sriracha, and warm water to make the dressing.
  3. 3. Shred the cabbage and other vegetables; combine in a large bowl.
