  • 1 1/22 pounds fresh cod (sliced)
  • 1 cup all purpose flour
  • 1/2 cup panko bread crumbs
  • 12 ounces beer (any light beer will work well)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 cups cole slaw mix
  • 1/2 cup chopped cilantro
  • 2 Tablespoons lime juice
  • 2 Tablespoons pineapple juice
  • 1/8 teaspoon salt
  • 1/2 cup mayo
  • 1 teaspoon honey
  • 1 teaspoon adobo sauce
  • 2 cups Canola oil
  • 1 package white corn tortillas
  • 12 avocados (thinly sliced)

Instructions

  1. In a bowl, mix citrus slaw ingredients and set aside.
  2. Combine chipotle mayo ingredients in another bowl and set aside.
  3. Slice cod into pieces; pat dry.
  4. In a mixing bowl, combine flour, panko, spices, and beer to make the batter.
  5. Heat canola oil in a skillet until it reaches 350°F.
  6. Dip fish in batter and fry in batches until golden brown (about 2 minutes per side).
  7. Drain fish on a wire rack.
  8. Warm tortillas; assemble tacos with fish, slaw, avocado, and drizzle with chipotle mayo.
