  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 1 teaspoon Dijon mustard

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Pat the cod fillets dry with paper towels and brush both sides generously with olive oil.
  3. Season the fillets with salt, pepper, garlic powder, and optional paprika.
  4. Place the seasoned fillets on the baking sheet, spacing them evenly apart.
  5. Bake for about 12 to 15 minutes or until the fish is opaque and flakes easily with a fork.
  6. While baking, mix Greek yogurt, lemon juice, lemon zest, Dijon mustard, and dill in a bowl to create the sauce. Season with salt and pepper to taste.
