- 2 1/4 tsp active dry yeast
- 1 large egg
- 2/3 cup mashed bananas (about 2 ripe bananas)
- 5 1/4 cups all-purpose flour
- 1 tsp salt
- 1/4 cup granulated sugar
- 10 tbsp unsalted butter (room temperature)
- 3/4 cup packed brown sugar
- 1 tbsp ground cinnamon
- Additional sliced bananas for filling
- Cream cheese icing ingredients (cream cheese, unsalted butter, powdered sugar, vanilla extract)
- Activate the yeast by combining warm milk with sugar and yeast; let it sit until bubbly.
- In another bowl, mix mashed bananas and beaten egg; add to yeast mixture once ready.
- Gradually incorporate flour, salt, and remaining sugar until a soft dough forms.
- Knead on a floured surface for about 8-10 minutes until smooth and elastic.
- Let the dough rise in a greased bowl covered with a towel for about 1 hour or until doubled in size.
- Roll out the risen dough into a rectangle; spread softened butter and sprinkle with brown sugar and cinnamon.
- Add sliced bananas before rolling tightly into a log shape; cut into even pieces.
- Place rolls in a baking dish to rise again for about 30-45 minutes.
- Bake at 350°F (175°C) for about 25-30 minutes until golden brown.
- Prepare the cream cheese icing while rolls cool slightly; drizzle over warm rolls before serving.
