Bayou Crab Chowder is a heartwarming dish that captures the essence of Cajun cuisine, making it a perfect companion for cozy dinners or festive gatherings.   • 4 slices center cut bacon
  • 12 ounces frozen potatoes
  • 1 1/2 cups frozen corn
  • 4 cups vegetable broth
  • 1 1/2 teaspoons garlic salt
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 7 ounces turkey kielbasa
  • 2 cups fat free half and half
  • 1 pound cleaned crab meat

Instructions

  1. In a large pot over medium-high heat, cook the bacon until crisp. Remove and set aside.
  2. Add frozen potatoes, corn, vegetable broth, garlic salt, Cajun seasoning, thyme, and black pepper to the pot; bring to a boil.
  3. Reduce heat to simmer until potatoes are heated through. Optionally mash some potatoes for creaminess.
  4. Stir in sliced turkey kielbasa; continue to simmer until warmed through.
  5. Incorporate fat free half and half and all but 1/2 cup of crab meat; simmer until hot.
  6. Serve hot, garnished with remaining crab meat and Cajun seasoning.
