  • 2 pounds boneless, skinless chicken breasts
  • 3 tablespoons avocado oil
  • 2 cups BBQ sauce (divided)
  • 8 cups sliced romaine lettuce
  • 4 ears corn
  • 1 avocado (diced)
  • 1 (15-ounce) can black beans (drained and rinsed)
  • Fresh herbs (cilantro, basil, dill)

Instructions

  1. Preheat your grill to medium heat. In a bowl, mix chicken breasts with avocado oil and salt. Thread onto pre-soaked wooden skewers and brush half of the BBQ sauce on top.
  2. Grill the skewers for 10-12 minutes, turning occasionally and brushing with more BBQ sauce towards the end.
  3. In a mixing bowl, whisk together avocado oil, egg, coconut milk, lemon juice, red wine vinegar, salt, onion powder, garlic, dill, parsley, and black pepper for the dressing.
  4. On a large platter or bowl, layer sliced romaine lettuce as a base. Add grilled corn kernels cut from the cob, green onions, grape tomatoes, black beans, herbs, and diced avocado.
  5. Once the skewers are ready and slightly cooled, place them on top of the salad and drizzle with dressing before serving.
