  • 4 pounds beef chuck roast
  • 10 guajillo chiles
  • 5 ancho chiles
  • 3 arbol chiles
  • 2 Roma tomatoes
  • 1 white onion
  • 6 garlic cloves
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • Corn or cassava flour tortillas
  • Oaxacan cheese
  • Diced white onion and cilantro for garnish

Instructions

  1. Prepare the chiles: Remove stems and seeds from guajillo, ancho, and arbol chiles. Soak in hot water for about 15 minutes until softened.
  2. Create the sauce: Sauté quartered onion and unpeeled garlic in a Dutch oven over medium-high heat until fragrant. Add the browned beef chuck roast to the pot.
  3. Build flavor: Season with salt, pepper, cumin, oregano, cloves, cinnamon, ginger, and bay leaves. Pour in broth and apple cider vinegar; stir gently.
  4. Slow-cook: Cover tightly and simmer on low heat for 4-5 hours until the meat is tender.
  5. Shred beef: Remove cooked beef from the pot to cool slightly before shredding with forks.
  6. Strain broth: Pour remaining liquid through a fine mesh strainer to create your consommé.
  7. Assemble tacos: Warm tortillas, fill with shredded beef and Oaxacan cheese, then grill until crispy.
  8. Serve with warm consommé for dipping alongside fresh toppings.
