  • 1 cup grilled or roasted corn
  • 1 cup diced pineapple
  • ¼ cup red onion, finely diced
  • 1 jalapeño, finely minced
  • ½ bunch cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon agave
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon fresh cracked pepper
  • ¼ cup sour cream
  • ¼ cup mayo
  • 1 chipotle pepper in adobo sauce, finely chopped + 1 tablespoon adobo sauce
  • ½ lime, juiced
  • Warm corn tortillas
  • Purple cabbage, finely shredded
  • Cilantro
  • Lime wedges

Instructions

  1. Preheat oven to broil. Prepare blackening spice mix.
  2. Coat mahi mahi with avocado oil and seasoning; let marinate if time allows.
  3. Broil fish on a lined tray for about 8 minutes until cooked through.
  4. Combine corn, pineapple, jalapeño, cilantro, lime juice for salsa.
