  • 1 tablespoon olive oil
  • 1/4 red onion, (sliced)
  • 4 slices sourdough bread
  • 2 tablespoons soft butter, (for brushing the bread)
  • 4 tablespoons fig butter or jam
  • 5 ounces brie cheese, (thinly sliced)
  • 1 large Granny Smith apple, (thinly sliced)
  • 1/2 cup baby arugula

Instructions

  1. Heat olive oil in a small skillet over medium heat and caramelize the sliced onions for about 5 minutes. Set aside.
  2. Butter one side of each slice of sourdough bread. Spread fig jam on the unbuttered side.
  3. Layer brie slices, apple slices, caramelized onions, and arugula on half of the bread slices before topping with another slice.
  4. Grill in a nonstick skillet over medium-high heat until golden brown and cheese has melted (about 2-3 minutes per side).
