  • 34 crowns fresh broccoli (cooked and drained)
  • 1 cup real mayonnaise
  • 10.5 oz can of cream of chicken soup
  • 4 tablespoons butter (melted)
  • 1/4 cup diced white onion
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1.5 cups shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers (crushed)

Instructions

  1. Preheat the oven to 350°F and spray a 9×13 baking pan with nonstick cooking spray.
  2. Cut broccoli into bite-sized pieces and steam or boil until soft.
  3. Spread cooked broccoli evenly in the bottom of the prepared baking dish.
  4. In a mixing bowl, combine melted butter, mayonnaise, cream of chicken soup, and diced onion until well blended.
  5. Stir in eggs and one cup of shredded cheese; season with salt and pepper.
  6. Pour the cheesy mixture over the broccoli and smooth it out.
