  • 6 to 8 medium ripe tomatoes
  • 1 onion (optional)
  • 4 cloves garlic (2 pressed, 2 whole)
  • 5 tablespoons olive oil
  • 4 tablespoons balsamic vinegar
  • Salt & black pepper to taste
  • Fresh basil (4 sprigs)
  • 1 baguette
  • Parmesan cheese (optional)

Instructions

  1. Wash the tomatoes, dice them, and place them in a bowl. Add the pressed garlic.
  2. Combine olive oil, balsamic vinegar, salt, pepper, and chopped basil with the tomatoes; mix well.
  3. Preheat oven to 200°C (390°F). Slice the baguette and arrange on a baking sheet. Toast for about 10 minutes until golden brown.
  4. Top each toasted slice with the tomato mixture and add shaved Parmesan if desired.
  5. Serve immediately at warm or room temperature.
