Bruschetta Pasta Salad is a vibrant and refreshing dish that brings together the classic flavors of bruschetta in a delightful pasta form. Perfect for summer gatherings, picnics, or a light dinner, this easy-to-make recipe showcases the bright tastes of ripe tomatoes, fresh basil, and aromatic garlic.

  • 4 Vine Ripen Tomatoes (diced)
  • 1/2 small Red Onion (diced)
  • 2 tbsp Fresh Basil (chopped)
  • 1 Clove Garlic (minced)
  • 500 g Spaghetti Pasta
  • 5 tbsp Extra-Virgin Olive Oil
  • 3 tbsp Balsamic Vinegar Glaze
  • Salt and Black Pepper to taste

Instructions

  1. Cook spaghetti in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  2. In a mixing bowl, combine diced tomatoes, red onion, basil, garlic, oregano, salt, pepper, and 3 tbsp olive oil. Let marinate for 10-15 minutes.
  3. Toss cooked pasta with remaining olive oil and the bruschetta mixture until well combined. Adjust seasoning if needed.
  4. Drizzle with balsamic glaze before serving. Enjoy chilled or at room temperature.
