  • 1 lb ground beef
  • 2 (8-inch) flour tortillas
  • 3 cups cooked rice
  • 1/3 cup cilantro (roughly chopped)
  • ½ cup vegetable oil
  • 1 ripe avocado
  • 2 teaspoons lime juice
  • 1/8 teaspoon salt
  • 2 Roma tomatoes (diced)
  • 4 oz. sour cream
  • 1 cup shredded Mexican cheese blend
  • 2 tablespoons lime juice (for rice)
  • ½ teaspoon ground cumin
  • 1 cup whole kernel sweet corn (drained and rinsed)
  • 1 cup black beans (drained and rinsed)
  • 2 jalapeno peppers (seeded and diced)
  • 12 teaspoons hot sauce
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2/3 cup water
  • ½ cup white onions (diced)
  • 4 cloves garlic (minced)
  • 1 oz packet taco seasoning

Instructions

  1. Sauté diced onions and minced garlic in a skillet.
  2. Add ground beef and cook until browned; mix in taco seasoning and water.
  3. Prepare cilantro lime rice by mixing cooked rice with butter, lime juice, cumin, and chopped cilantro.
  4. In serving bowls, layer cilantro lime rice as the base, followed by seasoned ground beef.
  5. Top with black beans, sweet corn, diced tomatoes, jalapeños, avocado slices, sour cream, and shredded cheese.
  6. Garnish with fresh cilantro before serving.
