  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 cup heavy cream
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Cook penne pasta until al dente (8–10 minutes). Reserve half a cup of starchy water before draining.
  2. Season chicken strips with salt, black pepper, Cajun seasoning, and smoked paprika.
  3. Heat olive oil and one tablespoon of butter in a large skillet over medium-high heat. Sear chicken until golden brown (about 7 minutes), adding minced garlic during the last minute.
  4. In the same skillet, add heavy cream and remaining butter; simmer gently for 3 minutes.
  5. Stir in Velveeta, mozzarella, and Parmesan until completely melted.
  6. Toss cooked penne into the sauce along with reserved pasta water as needed for consistency.
