  • 3 lbs red potatoes
  • 34 celery stalks
  • 6 hard-boiled eggs
  • 2 green onions
  • 1 1/3 cups mayonnaise
  • 1/3 cup sour cream
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • 1/2 tsp sea salt
  • 1/2 tsp cracked pepper
  • 1½ tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano

Instructions

  1. Boil the red potatoes in salted water for 12-15 minutes until tender. Drain and cool slightly.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, sea salt, and cracked pepper.
  3. In a large bowl, combine cooled potatoes with chopped celery, green onions, and hard-boiled eggs. Toss with two-thirds of the dressing until well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving. Just before serving, mix in remaining dressing.
