  • 34 celery stalks
  • 6 hard-boiled eggs
  • 2 green onions
  • 1½ tsp paprika (smoked)
  • 1/4 tsp cayenne pepper
  • 1½ cups mayonnaise
  • 1/3 cup sour cream
  • 1 tablespoon apple cider vinegar

Instructions

  1. Boil the potatoes in salted water for 12–15 minutes until tender. Drain and let cool slightly.
  2. Whisk together dressing ingredients in a bowl until smooth.
  3. In a large bowl, combine cooled potatoes, chopped eggs, celery, and green onions. Mix with two-thirds of the dressing until coated.
  4. Chill for at least 30 minutes before serving. Toss with remaining dressing and garnish before serving.
