  • 3 lbs red potatoes
  • 6 hard-boiled eggs
  • 34 celery stalks
  • 2 green onions
  • 1 1/3 cups mayonnaise
  • 1/3 cup sour cream
  • 1½ tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 T apple cider vinegar
  • 1 T Dijon mustard
  • 1/2 tsp sea salt
  • 1/2 tsp cracked pepper

Instructions

  1. Boil the potatoes in salted water for 12–15 minutes until fork-tender. Drain and let cool.
  2. In a mixing bowl, whisk together the mayo, sour cream, apple cider vinegar, Dijon mustard, and Cajun spices until smooth.
  3. In a large bowl, combine the cooled potatoes with chopped eggs, celery, and green onions. Toss with two-thirds of the dressing.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Just before serving, toss with remaining dressing and garnish as desired.
