Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper.

  3. In another bowl, combine the wet ingredients: mashed banana, shredded carrot, maple syrup, milk, oil, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; fold in optional add-ins if desired.
  5. Transfer batter to the prepared pan and bake for about 45 minutes or until a toothpick comes out mostly clean.
  6. Allow to cool in the pan for a few minutes before transferring to a wire rack.
