  • 2 cups whole wheat flour (or gluten-free alternative)
  • 1 egg
  • 1/4 cup parsley or spinach puree
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Cook and mash the carrots until smooth.
  3. In a large bowl, combine the mashed carrots, flour, egg, and coconut oil to form a dough. Adjust flour as needed for consistency.
  4. Blend parsley or spinach with water until smooth.
  5. Divide the dough into two portions; knead the green puree into one half while leaving the other half orange.
  6. Roll each portion into ropes and cut them into 5-6 inch pieces.
  7. Twist one green rope and one orange rope together to form candy cane shapes.
  8. Place on the baking sheet; sprinkle with sea salt if desired.
  9. Bake for 20-25 minutes until firm and golden brown.
