  • 1/2 lb penne pasta
  • 1 lb chicken breasts
  • 2 cups sharp cheddar cheese (grated)
  • 1 cup chicken broth
  • 1 cup milk
  • 1/2 yellow onion (chopped)
  • 2 garlic cloves (minced)
  • 2 tbsp all-purpose flour
  • 1 tbsp butter
  • Oil (for cooking)
  • Salt, black pepper, garlic powder, onion powder, paprika, dried parsley (for seasoning)

Instructions

  1. Steam broccoli florets in a skillet with a bit of water and salt for about 5 minutes until tender but crisp. Set aside.
  2. Cook penne pasta according to package instructions until al dente. Drain and set aside.
  3. Season chicken breasts with salt, pepper, garlic powder, onion powder, and paprika. Sear in a skillet with butter and oil over medium heat until golden brown on both sides and cooked through. Let rest before slicing.
  4. In the same skillet, sauté chopped onion in remaining butter/oil until translucent. Add minced garlic and cook for another minute.
  5. Sprinkle flour over onion mixture; stir to form a roux. Gradually whisk in milk and chicken broth until smooth; simmer until thickened.
  6. Stir in grated cheddar cheese until melted and creamy.
  7. Combine pasta, chicken, broccoli, and cheese sauce in the skillet; mix well to coat evenly.
  8. Transfer to an oven-safe dish if desired; top with additional cheese and bake at 350°F for 20 minutes covered with foil, then an additional 10-15 minutes uncovered until bubbly.
