  • 10 oz linguine pasta
  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 oz cream cheese
  • Salt and black pepper, to taste
  • Chopped parsley for garnish

Instructions

  1. Boil a large pot of salted water and cook the linguine until al dente according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add chicken strips seasoned with Cajun seasoning, cooking until golden brown and fully cooked through. Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic until fragrant (about 30 seconds). Pour in heavy cream and chicken broth, scraping any browned bits from the bottom of the pan. Let simmer for about five minutes until slightly thickened.
  4. Lower the heat and gradually stir in Velveeta, cheddar, mozzarella, Parmesan, and cream cheese until melted and smooth.
  5. Add the cooked linguine and chicken back into the skillet, tossing gently until well coated in sauce. Season with salt and pepper to taste.
  6. Serve immediately, garnished with chopped parsley.
