  • 2 boneless skinless chicken breasts
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Olive oil for cooking

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 6–7 minutes on each side until fully cooked. Let rest before slicing.
  2. Slice avocado, red onion, and tomato.
  3. Spread mayonnaise and Dijon mustard on one side of each slice of bread.
  4. Layer sliced chicken, avocado, cheese, onion, and tomato on two slices of bread (mayo side up) and top with remaining slices (mayo side down).
  5. Grill sandwiches in a skillet over medium heat with butter or olive oil until golden brown and cheese melts (about 3–4 minutes per side). Let cool slightly before serving.
