  • 4 large dried New Mexico or guajillo chiles
  • 2 medium shallots
  • 8 garlic cloves
  • 1 piece ginger (2 inches)
  • ¼ cup chopped cilantro stems
  • 2 tablespoons vegetable oil
  • 2 cans (14 oz each) unsweetened coconut milk
  • 2 cups low-sodium chicken broth
  • lb skinless boneless chicken thighs
  • 1 lb Chinese egg noodles

Instructions

  1. Soak the chiles in boiling water for about 25–30 minutes until softened.
  2. In a food processor, blend the soaked chiles with shallots, garlic, ginger, cilantro stems, coriander, turmeric, curry powder, and reserved soaking liquid until smooth.
  3. Heat vegetable oil in a large pot over medium heat; cook the curry paste for 4–6 minutes until darkened.
  4. Add coconut milk and chicken broth; bring to a boil. Add chicken thighs and simmer for 20–25 minutes until fork-tender. Shred the chicken once cooled slightly.
  5. Cook egg noodles according to package instructions; drain well.
  6. Return shredded chicken to the pot with fish sauce and palm sugar; adjust seasoning as desired. Serve soup over noodles with your favorite toppings.
