  • 1 pound rigatoni pasta
  • 32 oz. marinara sauce
  • 3 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 2 small boneless skinless chicken breasts
  • 1/2 cup flour
  • 2 eggs
  • 1.5 cups Italian breadcrumbs
  • 1/2 cup vegetable oil
  • 2 Tablespoons butter
  • Fresh Parsley (to garnish)

Instructions

  1. Cook rigatoni in boiling salted water until al dente; drain.
  2. Set up three shallow bowls for breading: one with seasoned flour, one with beaten eggs, and one with breadcrumbs.
  3. Dredge chicken breasts in flour, dip in eggs, then coat in breadcrumbs.
  4. Heat vegetable oil in a frying pan and cook chicken until golden brown, about 4–5 minutes per side; slice into strips.
  5. Preheat oven to 375°F (190°C). In a mixing bowl, combine cooked pasta with marinara sauce and half of each cheese.
  6. In a baking dish, layer half the pasta mixture, top with chicken slices, then pour remaining mixture on top and sprinkle with remaining cheeses.
  7. Dot with butter and bake for 25–30 minutes until bubbly.
