- 16 ounces spaghetti
- 4 raw chicken breasts (cut into 1-inch pieces)
- 1 ½ cups yellow onion (chopped)
- 4 cloves garlic (minced)
- 2 teaspoons oregano
- 3 teaspoons cumin
- 3 teaspoons chili powder
- 1 can (10 ounces) Rotel (drained)
- 2 cans (10.5 ounces each) cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 2 cups pepper jack cheese (grated)
- Preheat oven to 350ºF (177ºC) and grease a 9×13 inch baking dish.
- Cook spaghetti according to package instructions until al dente; drain and set aside.
- In a large skillet, heat vegetable oil over medium-high heat. Season cubed chicken with salt and pepper, then brown in batches until cooked through.
- Sauté onions and garlic in the same skillet until translucent. Add oregano, cumin, chili powder; cook for another minute.
- In a mixing bowl, combine Rotel, cream of chicken soup, sour cream, and milk; mix well.
- In the pot with spaghetti, add chicken mixture and creamy sauce; mix until well combined.
- Pour into the prepared baking dish and top with grated cheese. Bake for 30 minutes or until bubbly.
