  • 1 cup half-and-half
  • 1 cup chicken broth
  • 1 lb boneless skinless chicken breast, cubed
  • ½ pound Mezzi rigatoni pasta
  • 3 cups packed baby spinach
  • ¾ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon hot sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon mustard powder
  • ½ teaspoon EACH: basil, oregano, garlic salt, parsley
  • ¼ teaspoon red pepper flakes
  • 1 ½ teaspoons lemon pepper seasoning

Instructions

  1. In a bowl, whisk together half-and-half, chicken broth, hot sauce, soy sauce, mustard powder, and dried herbs.
  2. Heat olive oil in a large skillet over medium-high heat. Season cubed chicken with lemon pepper seasoning and sauté until golden brown. Remove from skillet.
  3. Boil salted water in a pot and cook Mezzi rigatoni until al dente; drain and set aside.
  4. In the same skillet used for chicken, add apple vinegar to deglaze the pan. Add minced garlic and cook until fragrant.
  5. Melt butter into the mixture and sprinkle flour to create a roux. Gradually pour in the prepared sauce mixture while stirring continuously until thickened.
  6. Stir in cream cheese and Parmesan cheese until melted.
  7. Add wilted spinach and cooked pasta back to the skillet along with seared chicken; mix well to combine.
