  • 1 teaspoon paprika

  • Salt and pepper, to taste
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken (rotisserie works great!)
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • Crispy tortilla strips or crushed tortilla chips
  • Sliced avocado
  • Shredded cheese (optional)
  • Sour cream or Greek yogurt (optional)
  • Extra cilantro & lime wedges (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add ground cumin, chili powder, paprika, and oregano; stir for one minute to bloom the spices.
  4. Incorporate diced tomatoes, black beans, corn, and chicken broth; bring to a gentle boil.
  5. Stir in shredded chicken and reduce heat to simmer for 15–20 minutes.
  6. Mix in lime juice and chopped cilantro just before serving.
  7. Ladle soup into bowls and garnish with tortilla strips, avocado slices, shredded cheese, sour cream, and extra cilantro as desired.
