  • 1 lb jumbo shrimp (peeled and deveined)
  • 1/2 cup parsley (finely chopped)
  • 4 cloves garlic (minced)
  • 1 Fresno pepper (seeded and minced)
  • 1/2 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • Smoked paprika
  • Honey

Instructions

  1. In a mixing bowl, combine parsley, minced garlic, Fresno pepper, oregano, red wine vinegar, salt, and pepper. Gradually whisk in olive oil until well blended. Set aside.
  2. In another bowl, coat the shrimp with olive oil, smoked paprika, honey, garlic, salt, and pepper.
  3. Preheat grill or grill pan over medium-high heat. Grill shrimp for 2–3 minutes on each side until pink and opaque.
  4. Remove from the grill and drizzle generously with chimichurri sauce before serving.
