  • 1 1/4 pounds flank steak
  • 1/3 cup olive oil
  • 1 lime (zested and juiced)
  • 1 tablespoon minced garlic
  • 1/2 cup minced cilantro
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice
  • 1 can black beans (drained and rinsed)
  • 1 cup corn
  • 1 avocado
  • 1/2 red onion (sliced)
  • 1 cup cherry tomatoes (halved)
  • Cilantro lime crema (optional)

Instructions

  1. Whisk together olive oil, lime juice & zest, garlic, cilantro, salt, and pepper in a mixing bowl.
  2. Pour the marinade over the flank steak in a shallow dish or resealable bag. Cover tightly and refrigerate for at least one hour or up to overnight.
  3. Heat a cast iron skillet over medium-high heat. Sear the marinated steak for about 3–4 minutes on each side until it reaches an internal temperature of around 145°F.
  4. Let the steak rest for ten minutes before slicing into strips.
  5. Assemble your bowls by starting with cooked rice as the base, followed by black beans, corn, sliced steak, avocado, red onion, cherry tomatoes, and a drizzle of cilantro lime crema if desired.
