2 lbs flank steak
1/4 cup olive oil
1/4 cup lime juice
1/2 cup fresh cilantro (chopped)
3 cloves garlic (minced)
1 tsp ground cumin
1 tsp chili powder
1 tsp salt
4 cups cooked rice (preferably jasmine or basmati)
2 bell peppers (sliced)
1 cup corn kernels
1 cup black beans (drained/tossed)
1 cup frozen Brussels sprouts (roasted)
2 avocados (sliced)
1 onion (thinly sliced)
Lime wedges (for serving)
Cilantro leaves (for garnish)
Instructions
In a mixing bowl, whisk together olive oil, lime juice, chopped cilantro, minced garlic, ground cumin, chili powder, and salt.
Marinate the flank steak in the mixture for at least 30 minutes or up to 4 hours.
Preheat your grill to medium-high heat.
Grill the marinated flank steak for about 3-4 minutes on each side until cooked to your liking. Allow it to rest for 10 minutes before slicing against the grain.
Sauté sliced onion in olive oil until translucent and caramelized.
Roast Brussels sprouts in a preheated oven at 425°F (220°C) for about 20 minutes until golden brown.
Assemble bowls by layering rice, sliced steak, sautéed onions, bell peppers, corn, black beans, roasted Brussels sprouts, and avocado slices.
Top with fresh cilantro and serve with lime wedges.
