  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 cup (2 sticks / 227 g) unsalted butter (room temperature)
  • 1 cup (224 g) vegetable oil
  • 1 cup (200 g) granulated sugar
  • 1 cup (125 g) confectioners' sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • ¼ cup freshly ground coffee beans (finely ground (such as you would for espresso))
  • 1 cup (125 g) confectioners' sugar for glaze
  • 2 tablespoons freshly brewed coffee for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and cream of tartar.
  3. In a stand mixer, cream the butter with both sugars until light and fluffy.
  4. Add eggs one at a time followed by vanilla extract; mix until combined.
  5. Gradually add the dry ingredients to the wet mixture and mix on low speed.
  6. Fold in finely ground coffee beans until evenly distributed.
  7. Drop rounded tablespoons of dough onto baking sheets.
  8. Bake for 10 minutes or until edges are lightly golden. Cool before serving.
