  • 500g chicken breast, diced
  • 2 tbsp olive oil or sesame oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas or green beans
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 2 garlic cloves, minced
  • 1 small piece fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp cornstarch
  • 2 tbsp water
  • 1.5 cups brown rice

Instructions

  1. Prepare the brown rice by rinsing it under cold water. In a pot, combine 1.5 cups of brown rice with 3 cups of salted water. Bring to a boil, then reduce heat to low, cover tightly, and simmer for about 40-45 minutes until tender.
  2. While the rice cooks, heat oil in a large wok over medium-high heat. Add the diced chicken and stir-fry until golden brown and cooked through (about 5-7 minutes). Remove from pan.
  3. In the same pan, add garlic and ginger; sauté until fragrant (about 30 seconds). Then add bell peppers, snap peas (or green beans), broccoli, and carrot; stir-fry for about 3-4 minutes until crisp-tender.
  4. Whisk together the sauce ingredients in a bowl before adding to the veggies in the pan along with the cooked chicken. Stir well until everything is coated in the sauce.
  5. Serve over fluffy brown rice and enjoy your colorful creation!
