- 16 ounces cavatappi noodles
- 3 tablespoons olive oil
- 3 teaspoons garlic, minced
- 1 can (6 ounces) tomato paste
- 2 cups heavy whipping cream
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 2 teaspoons red pepper flakes
- 1 cup reserved pasta water
- Fresh parsley for garnish
- In a large pot, boil salted water and cook cavatappi noodles until al dente (7–10 minutes). Reserve 1 cup of pasta water before draining.
- Heat olive oil in a large skillet over medium heat. Sauté minced garlic for about one minute until fragrant.
- Stir in tomato paste and then add heavy cream, mixing until combined and heated through.
- Season with salt, black pepper, and red pepper flakes. Adjust spice level as desired.
- Gradually add reserved pasta water until desired consistency is achieved.
- Toss drained cavatappi in the sauce until well-coated.
- Serve hot, garnished with fresh parsley.
