Cowboy Pasta Salad is a hearty and flavorful dish that combines the best of savory meats, creamy dressing, and fresh vegetables. This crowd-pleaser is perfect for summer barbecues, potlucks, or game day gatherings.

  • 1 pound dried wagon wheel pasta
  • 1 pound hickory smoked bacon
  • 3/4 pound lean ground beef
  • 1 teaspoon cumin
  • Pinch red pepper flakes
  • Salt and pepper, to taste
  • 1 cup mayonnaise
  • 1/4 cup barbecue sauce
  • 2 tablespoons spicy brown mustard
  • 2 tablespoons Worcestershire sauce
  • 2 & 1/2 teaspoons hot chili sauce
  • 15 ounce can whole kernel sweet corn, drained
  • 2 cups cherry tomatoes, halved
  • 1 & 1/2 cups shredded sharp cheddar cheese
  • 5 scallions, diced

Instructions

  1. Cook the pasta according to package directions until al dente; drain and rinse under cold water.
  2. In a large nonstick skillet, sauté the diced bacon until crispy; drain on paper towels.
  3. In the same skillet, cook the ground beef until browned; season with cumin and red pepper flakes.
  4. In a large bowl, whisk together mayonnaise, barbecue sauce, mustard, Worcestershire sauce, and hot chili sauce until smooth.
  5. Combine cooked pasta, bacon, ground beef, corn, tomatoes, cheese, and scallions in the bowl; toss to coat in dressing.
  6. Chill for at least one hour before serving for best flavor.
