  • 12 baby portobello mushroom caps
  • 8 ounces cream cheese, softened
  • 8 ounces crab meat
  • 3 handfuls fresh spinach
  • 2 strips bacon
  • 1/4 cup shredded Parmesan cheese
  • Seasonings: Old Bay seasoning, onion powder, garlic

Instructions

  1. Preheat oven to 350°F (175°C). Cook bacon in a skillet until crispy; set aside.
  2. Sauté minced garlic and spinach in the same skillet until wilted.
  3. Combine crab meat with sautéed mixture; add diced bacon and seasonings.
  4. In a bowl, mix cream cheese with the crab mixture and Parmesan cheese until smooth.
  5. Clean mushroom caps; fill each with about 1 tablespoon of the crab filling and top with more Parmesan.
  6. Bake on an oiled baking sheet for about 15 minutes or until golden.
