  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium red onion, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 lb linguine pasta
  • 4 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated Romano cheese
  • Salt and black pepper to taste
  • 2 tbsp chopped sun-dried tomatoes

Instructions

  1. Cook the linguine according to package instructions until al dente. Reserve half a cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Sprinkle chicken with Cajun seasoning and sauté until golden brown and fully cooked (5–7 minutes). Remove from skillet and set aside.
  3. In the same skillet, add bell peppers and onion; sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Pour in chicken broth and simmer for 2–3 minutes to deglaze the pan.
  5. In a separate saucepan, melt butter over medium heat; add garlic and cook until fragrant. Slowly pour in heavy cream and stir in Parmesan and Romano cheese until smooth.
  6. Combine the creamy sauce with the sautéed vegetables and chicken in the skillet. Toss in the cooked linguine along with reserved pasta water as needed to achieve desired consistency.
  7. Stir in sun-dried tomatoes before serving.
