8 oz fettuccine pasta
1 lb boneless, skinless chicken breasts
2 tbsp Cajun seasoning
3 tbsp unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook the fettuccine in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup pasta water before draining.
In a large skillet over medium-high heat, melt 1 tablespoon of butter and sear the seasoned chicken for about 5–7 minutes on each side until cooked through. Remove and set aside.
In the same skillet, add the remaining butter and minced garlic, sautéing for about 1 minute until fragrant.
Pour in the chicken broth and bring to a gentle simmer before adding the heavy cream; stir continuously as it thickens.
Incorporate the grated Parmesan cheese until melted and smooth; season with salt and pepper.
Return the chicken to the skillet, followed by the drained fettuccine, tossing everything together gently.
