8 oz linguine pasta
1 tbsp olive oil
13 oz chicken or turkey sausage, cut into rounds
1 lb raw shrimp, peeled and deveined
Salt and pepper to taste
2 tbsp unsalted butter
1 tbsp tomato paste
1 tbsp minced garlic
2 tsp Cajun seasoning
1 tsp dried oregano
1½ cups heavy cream
2 oz grated Parmesan cheese
1 tbsp fresh parsley, chopped
Boil water in a large pot with salt. Cook linguine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
Heat olive oil in a large skillet over medium-high heat. Sauté sausage until browned (about 5 minutes), then add shrimp and season with salt, pepper, and Cajun seasoning. Cook until shrimp are opaque (4–5 minutes). Remove from skillet.
In the same skillet, melt butter over medium heat. Stir in tomato paste and cook for 1–2 minutes. Add minced garlic, remaining Cajun seasoning, and oregano; cook until fragrant.
Pour in heavy cream and stir continuously until simmering. Add Parmesan cheese until melted and smooth.
Toss cooked linguine into the sauce along with reserved pasta water as needed for consistency. Gently fold in sausage and shrimp.
Garnish with parsley before serving warm.
