  • 2 boneless skinless chicken breasts
  • Salt & pepper, to taste
  • 1 tbsp olive oil
  • 300g fettuccine pasta
  • 2 cups broccoli florets
  • 2 garlic cloves, minced
  • 2 tbsp butter
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Boil a large pot of salted water and cook fettuccine for about 10 minutes until al dente. In the last two minutes of cooking, add broccoli florets; drain together.
  2. While pasta cooks, season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and grill chicken for about 6-7 minutes on each side until cooked through. Let rest before slicing.
  3. In the same skillet, melt butter over medium heat. Add garlic and sauté for about one minute until fragrant. Pour in heavy cream and bring to a gentle simmer.
  4. Stir in Parmesan cheese until melted and sauce thickens (about 3-4 minutes).
