  • 2 chicken breasts, cut into chunks
  • 250 g fettuccine or linguine pasta
  • 1.5 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 2 garlic cloves, minced
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 200 ml heavy cream
  • 50 g grated parmesan cheese
  • 1 tbsp tomato paste
  • 1 tsp Italian herbs or dried basil
  • Salt & pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Bring a large pot of salted water to boil. Cook fettuccine according to package instructions until al dente (about 10 minutes). In the last two minutes, add broccoli florets.
  2. Drain the pasta and broccoli, reserving half a cup of pasta water.
  3. In a large skillet over medium-high heat, heat olive oil and sauté chicken chunks seasoned with salt and pepper until golden brown and cooked through (about 6–7 minutes). Remove from skillet and set aside.
  4. In the same skillet, melt butter and sauté red bell pepper for about 2-3 minutes until softened. Add minced garlic and cook for another minute.
  5. Stir in tomato paste and cook for one minute before adding heavy cream. Let it simmer gently for about 3–4 minutes until slightly thickened.
  6. Incorporate grated parmesan cheese into the sauce until melted and creamy. Adjust consistency with reserved pasta water if needed.
  7. Add cooked fettuccine, broccoli, and chicken back into the skillet; toss well to combine and heat through.
  8. Season with Italian herbs, salt, and pepper to taste before garnishing with fresh parsley if desired.
