Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, cut into strips
  • 4 slices turkey bacon, chopped
  • 1 small head cauliflower, cut into florets
  • 1 tablespoon curry powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook until golden brown on both sides (about 10 minutes total). Remove chicken and set aside.
  2. In the same skillet, add turkey bacon and cook until crispy (about 3-4 minutes).
  3. Stir in chopped onion and cook until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
  4. Add sliced mushrooms and cook until browned (about 5-7 minutes).
  5. Sprinkle flour over the mixture and stir for one minute. Gradually add chicken broth while stirring to create a smooth sauce.
  6. Reduce heat to low, then mix in heavy cream and simmer for about 5 minutes until thickened.
  7. Serve the creamy sauce over curry-spiced cauliflower florets.
